I am a strong advocate of living gluten free. Once I removed
gluten from my diet, my life improved so much that I can truly
say I am a changed person. I love getting up every morning
because I feel wonderful. And, I get more joy out of the food I
eat than I ever did before.
I quit eating gluten after reading an article about gluten
intolerance and celiac disease in an April, 2006 edition of
Parade magazine. I realized that several of the health problems
associated with an inability to tolerate gluten were the same
ones I was dealing with every day. Migraine headaches and
intestinal problems, which had caused me misery since I was a
teenager, were so unmanageable that avoiding gluten seemed
easy in comparison.
The reward for eliminating gluten from my diet was immediate.
After six months of gluten-free living, a number of chronic
medical conditions, including the migraines and intestinal
problems, were simply gone.
I've learned quite a bit about living a gluten-free life over the
last four years. I've read books and magazines, tried hundreds
of gluten-free foods and found many restaurants that make
wonderful meals I can eat. I've been to several cooking classes.
But, I discovered everything pertaining to gluten-free living in
Albuquerque by accident. And, I missed events, such as the
Albuquerque Gluten Intolerance Support Group meetings, that
would have made my life much easier- especially at the
beginning of this adventure.
