Il Vicino is my family's favorite place to meet with friends
and enjoy a great meal. Unfortunately, their menu is
limited to pizza, pasta and sandwiches.
I decided I wasn't going to miss the camaraderie that
goes along with our frequent visits to Il Vicino so I would
eat beforehand. When the manager noticed that I wasn't
eating and I explained why, she told me that I could bring
in any gluten-free pizza crust in its unopened packaging
and they would use it to make me pizza. Over time, Il
Vicino has prepared pizza on several different gluten-free
pizza crusts that I've brought in and they also suggested
using corn tortillas. I prefer the corn tortillas topped with
mozzarella cheese and green chiles along with a side of
marinara for dipping. It isn't pizza but it is an excellent
meal.
If you have a favorite gluten-free pizza crust, bring it with
you in its unopened packaging and defrost it if frozen. You
can order any combination of toppings that meet your
dietary needs. Your pizza will be prepared to avoid cross
contamination and will be cooked in the pizza oven on a
separate plate.
