I prefer restaurants that are locally owned because the staff is
normally well-trained on their meal preparation process.
However, there are some chain restaurants (but not fast-food)
that I include because they do an exceptional job meeting the
needs of their gluten-intolerant customers. In order for me to
review and recommend a restaurant:

Fortunately, many restaurants now accommodate gluten-free
patrons - more than I can review in a timely manner. I want
users of this site to know about all the restaurants from which
they can choose. So if I learn about a restaurant serving
gluten-free meals, I have a page describing what I know about
that establishment. This way your choices are not limited to
only those restaurants I've reviewed.
