September 2015, from reader Chantal: Zia Pizza Company is the perfect location for people with special dietary needs in Las Cruces, NM. My husband has celiac disease and I am lactose intolerant, so when we go out it’s very difficult to find something we can both eat and enjoy, but Zia Pizza is too excellent for us pass up every time we travel south. They use a gourmet buffalo cheese on their pizzas that looks and smells amazing. They clean their oven before making gluten free pizzas and my incredibly sensitive husband has never been sick the dozens of times we have eaten there. Don’t be afraid to ask questions at Zia Pizza, they are so nice about explaining everything! Their gluten free crust is full sized and delicious, it’s a thin crust but never over cooked. They also offer Daiya cheese for lactose intolerant people, though I prefer to just load up on toppings and enjoy! Many of the ingredients are hand-made at Zia Pizza, including the sausage for the pizza. Yum! Don’t forget the green chile.
